Ramadan Mubarak !!!

Here are some snack recipes that are traditionally made in my home during the holy fasting month. Do add this to your menu on this Ramadan.

Ingredients:

UNNAKKAI ( Stuffed Plantain Fritters) –

Plaintain (Neither too ripe nor raw) – 4 medium
Shredded Coconut – 1 cup
Chopped cashews & Raisins – a handful
Sugar – 2 tbsp
Cardamom powder – 1/2 tsp
Ghee – 2-3 tbsp
Coconut oil – for frying

CHEMEEN PATHIRI ( Prawns Masala in Rice Pockets )

Rice – 1 cup (use red rice, jaya rice )
Coconut – 1/2 cup
shallots – 4-5
Fennel seeds – 1 tsp
Cumin seeds – 1 tsp
Rice Flour – 1/2 cup
salt

Prawns – 1/2 kg
Marination – kashmiri chilly powder 2tsp, turmeric powder 1 tsp, salt 1 tsp
Onion – 1 sliced
garlic cloves – 4
Ginger – 1″ piece
Green Chillies – 3
Tomato – 1
Corainder Leaves – a handful chopped
Kashmiri Chilly powder – 1.5 tsp
Turmeric powder – 1/2 tsp
Fennel seed powder – 1/4 tsp
salt
water – 1/4 cup

GOTHUMBU ELA ADA ( Sweet Stuffed Wheat Parcels )

Whole Wheat – 1 cup
Shredded Coconut – 1/2 cup
Jaggery melted (thick syrup) – 1/4 -1/2 cup
Flattened rice/Poha/Aval – 1 cup
Cardamom Powder – 1/2 tsp
salt
